An absolute favorite… Banana Cinnamon Chip Muffins

One of my favorite things to bake is a banana muffin.  Not only are they delicious but banana muffins are the perfect solution to your brown bananas…. reduce the waste and bake! I often add something into the banana muffin batter – toasted walnuts, chocolate chips… This time, I decided to use cinnamon chips that I purchased at the local Dutch Market.  Banana and cinnamon are amazing combinations.  Trust me, this is a winning recipe that I’ve used countless times.


Banana Muffins (or Bread)

24 muffins (or one loaf)

  • 2-3 ripe bananas (skins have become bruised)
  • 1/2 cup of sour cream (or yogurt)
  • 2 large eggs
  • 1.5 teaspoons of vanilla extract
  • 10 tablespoons of butter (softened)
  • 2 cups of flour
  • 3/4 cup of sugar
  • 1 teaspoon of baking soda
  • 3/4 teaspoon of baking powder
  • 1/2 teaspoon of salt
  • 1 cup of cinnamon chips

For “spicier” banana muffin, add a tablespoon of nutmeg, cinnamon, or ginger.

Preheat oven to 350 degrees Fahrenheit.

In a stand mixer using the paddle, add the bananas (without the peel) and turn the mixer on medium speed to puree the bananas.  Then mix in the sour cream, eggs and vanilla extract.  Finally, add the soften butter and mix.

In a separate bowl, add the flour, sugar, baking soda, baking powder and salt (and also cinnamon/nutmeg if you like).  Use a fork to blend the dry ingredients together.

On a low speed, begin adding the dry ingredients into wet ingredients in the mixer.  Once completely these ingredients are mixed, fold in the cinnamon chips.  Now, it’s time for the oven.

Place muffin liners into the two tins for a total of 24 muffins.  Then, fill the muffin liners about 3/4 of the way.  I like to use a cookie scoop to avoid any drippy messes.

Bake until lightly brown, until it bounces to the touch.  You can also tell it’s done if you poke a toothpick through a muffin and when you pull it back out, it is clean (without batter).

The muffins will take about 18-20 minutes to bake.  If you decided to do the bread loaf, it will take about 1 hour and 10 minutes to bake.  Do keep an eye on them regardless.

Finally, let the muffins cool in pan for a few minutes and transfer to wire rack.


Check out the center of the banana muffin… so pretty and, of course, tasty!
